Maple roasted cashews

Simple but freaking delicious - maple roasted cashews - three ingredients - 8 mins to make - and a fabulous addition to your breakfast fruit platter!

It almost seemed too ridiculous to post such a simple recipe - but guys - the maple roasted cashews served with this colourful fruit platter - SO GOOD.

We didn't venture anywhere exciting over the Christmas break - another staycation for us. It was lovely really - we packed food and went hiking most days, and got plenty of quiet reading under the old trees in our national parks (heaven).

But one of the ways I made it feel just a little more special, was to make mornings feel like we were waking at a five star health retreat.

Sparkling clean house (ooooh YES), diffuser on (Wild Orange, Forgive and Litsea all summer), colourful, tropical fruit platters thoughtfully cut and presented, my best, special occasion ceramics, soft music, rainbows dancing around the table from the crystal in the window, and a hot brew of coffee through our beautiful chemex filter.

It was actually pretty special!

So - despite this being a simple recipe - try serving it with a fruit platter like this - add some vegetables in to balance out the sugars (cucumber, celery, red peppers), a few teaspoons of chia seeds folded through some coconut yoghurt (protein, healthy fats), and a dusting of freeze dried raspberry powder - we're going for 5 star here remember!

I have a similar, but far fancier maple spiced pecan recipe as part of a squash salad I made if that is something you'd like to try out too.

Maple Roasted Cashews

Ridiculously simple but sometimes the best things are! Enjoy with a fresh fruit platter as a healthy snack. 2 cups - 8 serves, around four tablespoons per.

Ingredients
  

  • 2 cups raw cashews
  • 1 tablespoon pure maple syrup
  • ½ teaspoon sea salt coarse

Instructions
 

  • Pre-heat oven at 175˚C (350˚F), fan-bake, and line a baking tray with baking paper.
  • Add cashews, maple and sea salt to a bowl and toss to combine.
  • Spread evenly over baking tray and bake for up to 8 minutes - tossing frequently to prevent burning.
  • Remove from oven and let cool to harden before enjoying.
