This month’s video is How to Make Faster Pasta. Raw, plant-based, low fat, gluten free pasta. It’s delicious, it’s quick, and it’s my weekly go to when I’m hungry and need food fast.

How to Make Faster Pasta
Ingredients
SAUCE:
- ½ cup naturally sundried tomatoes soaked till soft
- 2 to matoes de-seeded and chopped
- 1 tablespoon white miso
- 1 tablespoon Italian herbs
- A few sultanas
- A squeeze of lemon juice
- Blend you can add a tablespoon of olive oil if you’d like it richer
EVERYTHING ELSE:
- 1 zucchini
- ½ avocado
- A few black olives
- Fresh parsley and basil
Instructions
- Peel, top and tail the zucchini and spiralise into noodles
- Pour the tomato sauce over the noodles
- Top with sliced avocado, olives and fresh herbs
