Zucchini Pasta
A super quick and easy zucchini pasta for one, with a rich and flavoursome marinara sauce - all raw!
Equipment
- Blender
- Spiralizer
Ingredients
Marinara sauce:
- ½ cup naturally sun-dried tomatoes (oil free) soaked till soft
- 2 tomatoes de-seeded and chopped
- 1 tablespoon white miso
- 1 tablespoon Italian herbs
- Few sultanas
- Squeeze of lemon juice
Zucchini pasta:
- 1 zucchini
- ½ avocado
- A few black olives
- Fresh parsley and basil
Instructions
Marinara sauce:
- Blend all ingredients until just combined then set aside. Note - can add a dash of olive oil for a richer sauce.
Zucchini pasta:
- Peel, top and tail the zucchini, spiralize into noodles and plate up.
- Pour the tomato marinara sauce over the noodles.
- Top with sliced avocado, olives and fresh herbs.
