O no! Smoothie time and you have no fresh young coconuts on hand in the middle of winter to put in your morning goodness! Never fear, it is actually quite easy to make your own. Obviously, this is not as good as the real thing, but it comes a pretty close second. Regardless, definitely a handy trick to have up your apron sleeve.
Coconut Water
- 1/4 cup dried, shredded or desiccated coconut
- 1 cup water
METHOD:
- Blend well.
- Pour into a glass lined with a nut milk bag.
- Strain the pulp out to get water.
- Or leave the pulp in for a thicker, milkier texture, which is nice poured straight over grawnola or oats. If you do this, you may want to add a pinch of salt and a dash of vanilla to the mix while you blend.
