Equipment

  • Blender
  • Spiralizer

Ingredients
  

Marinara sauce:

  • ½ cup naturally sun-dried tomatoes (oil free) soaked till soft
  • 2 tomatoes de-seeded and chopped
  • 1 tablespoon white miso
  • 1 tablespoon Italian herbs
  • Few sultanas
  • Squeeze of lemon juice

Zucchini pasta:

  • 1 zucchini
  • ½ avocado
  • A few black olives
  • Fresh parsley and basil

Instructions
 

Marinara sauce:

  • Blend all ingredients until just combined then set aside. Note - can add a dash of olive oil for a richer sauce.

Zucchini pasta:

  • Peel, top and tail the zucchini, spiralize into noodles and plate up.
  • Pour the tomato marinara sauce over the noodles.
  • Top with sliced avocado, olives and fresh herbs.
