Easy Matbucha

MATBUCHA

Moroccan matbucha (pronounced mat-boo-ha) is a popular cooked tomato salad made from summer tomatoes, red peppers, garlic, spices, and sometimes, eggplant.

WHAT IS MATBUCHA

MATBUCHA

Tomatoes, bell peppers, eggplant, shallots, garlic, spices, oil, sugar and salt.

YOU'LL NEED...

MATBUCHA

Peel and cube the eggplant, dice the bell peppers.

STEP ONE

MATBUCHA

Cook shallots, eggplant, peppers, sliced chilli and a good sprinkle of salt for 15 minutes until the vegetables have softened considerably.

STEP TWO

MATBUCHA

Add garlic, sweet paprika powder and dried chilli flakes, cook a few minutes.

STEP THREE

MATBUCHA

Add chopped tomatoes, salt, sugar and black pepper. Cook a further 10 minutes, stirring frequently, to thicken the mixture.

STEP FOUR

MATBUCHA

Remove from heat, mash half before serving. This is the texture you want to aim for - thick and jammy!

STEP FIVE

MATBUCHA

Slather over toasted sourdough, add avocado and top with fresh basil.
