TURKISH LENTIL SOUP

"This is a beautiful soup. The lemon and mint kick take it to an even better place. Made this last week and am making it again now.  One of my favourites." – S. Kidd.

YOU'LL NEED

Olive oil, onion, garlic, carrot, potato, red lentils, tomato paste, stock, lemon, spices.

TURKISH LENTIL SOUP

Cook onions until softened, then add carrots and garlic, cook a few minutes.

STEP ONE

Add tomato paste and spices, cook for another minute.

STEP TWO

TURKISH LENTIL SOUP

Add potato, lentils, stock and water. Cover, boil, reduce to a simmer.

STEP THREE

TURKISH LENTIL SOUP

Once cooked, use a stick blender to blend a small portion, for a creamy texture.

STEP FOUR

TURKISH LENTIL SOUP

Garnish with chilli oil, fresh mint leaves, and a squeeze of lemon. Perfection!
