SAFFRON RICE

Saffron rice is pure mood food.  Saffron has been well-studied for its therapeutic use in anxiety and depression, so give this recipe a whirl for its taste, potent antioxidants and uplifting benefits.

SAFFRON RICE

Brown basmati rice, vegetable stock, saffron threads, olive oil, onion, cinnamon, cardamom, bay leaf, cumin seeds, flaked almonds, pistachios, cranberries, pomegranate arils, orange zest.

YOU'LL NEED

Add half of the saffron threads to a mortar.

STEP ONE

SAFFRON RICE

Grind them to a powder with the pestle.

Add remaining threads, a little boiling water, steep.

SAFFRON RICE

Dry toast the nuts in a pan and set aside.

STEP TWO

SAFFRON RICE

Fry the spices in olive oil until fragrant.

SAFFRON RICE

Add basmati rice,  cook a few minutes.

SAFFRON RICE

Add vegetable stock and hydrated saffron, cook.

SAFFRON RICE

Once cooked, fold through fruit, nuts and orange zest.

STEP SIX

SAFFRON RICE

Pick out the bay leaf, cinnamon, cardamom pods before serving. Enjoy!
