RAW BEET SALAD

YOU'LL NEED

Beet, fennel, kale, carrot, mint, sultanas, goji berries, pumpkin seeds, olive oil, balsamic vinegar, lemon, maple syrup, dijon mustard.

RAW BEET SALAD

Dry toast pumpkin seeds in a pan and set aside.

STEP ONE

RAW BEET SALAD

Finely slice fennel - a mandoline slicer is helpful.

STEP TWO

RAW BEET SALAD

Remove inner stalks from kale, then roll leaves up and shred. Roughly chop fresh mint.

STEP THREE

RAW BEET SALAD

Peel and grate the beet and carrot.

STEP FOUR

RAW BEET SALAD

Wisk together all dressing ingredients.

STEP FIVE

RAW BEET SALAD

Combine all ingredients, you're ready to serve!

STEP SIX

RAW BEET SALAD

Serve as a ‘Buddha bowl’ – adding quinoa, edamame beans, avocado and a side of pickles.
