Raw Minted Cashew Yoghurt

I use the term ‘yoghurt’ very loosely here, only because it tastes similar. This recipe hasn’t been cultured, but does have a lovely, light, minty taste and soft texture. A great basic dressing. Yields 1/2 cup, providing 24 teaspoons, serving 12 (2 teaspoons per Kofta). Note active prep time excludes 2 hour soak time.

Ingredients
  

  • 1/2 cup raw cashews
  • 5 tbspn water
  • Juice of half a lemon
  • 1 tspn apple cider vinegar
  • 2 good pinches of coarse sea salt
  • 6 large fresh mint leaves

Instructions
 

  • Soak the cashews in ample water for a few hours (2-5 hours), then drain and rinse.
  • Add cashews and all other ingredients (including those 5 tablespoons of water) to a blender, whiz till creamy.
  • Serve with koftas and keep in the fridge.
