Witches' Fingers

This healthy Halloween recipe goes down a treat with kids. Made with plant-based whole foods - raw nuts, seeds, dates and coconut then dunked in dark chocolate. Smash some fresh raspberries to create 'blood'.

Ingredients
  

  • 2 cups almonds
  • 6 Medjool dates pitted
  • 1/4 cup rice malt syrup
  • 2 tablespoons flax seeds
  • 2 tablespoons chia seeds
  • 2 tablespoons coconut butter softened
  • 2 tablespoons buckwheat groats
  • 2 teaspoons vanilla
  • Few pinches coarse sea salt
  • 1 tablespoon cacao nibs

  • 300g dark chocolate to coat
  • Blanched almonds for ‘fingernails’

Instructions
 

  • In a food processor, blend the almonds till roughly crumbled.
  • Add all other ingredients except the cacoa nibs and blend till it forms a dough.
  • Add the cacao nibs last for a quick blitz.
  • Melt some dark chocolate over a double boiler (I used about 300g) gently while you shape the fingers – use about a tablespoon and a half per finger, and roll into a bumpy log.
  • Dip the fingers in chocolate and add an almond at the fingertip, let set on baking paper or in the fridge.
