This comforting recipe is an Ayurvedic healing meal. It is simple and easy to digest, given to people who are ill or recovering from illness, children, the eldery, or those needing to clear toxins (ama) and strengthen their digestive fire (agni).

THE DISH

Coconut oil or ghee Split yellow mung beans White basmati rice Mixed vegetables Kombu seaweed stick Coconut cream Vegetable stock Mixed spices

YOU'LL NEED

STEP ONE

Soak mung beans and  basmati rice in water  for 1 hour.

STEP ONE

Rinse well and set aside.

STEP TWO

Chop a mixture of vegetables.

STEP THREE

Heat oil or ghee  in a heavy bottomed  pot, then add...

STEP THREE

Whole spices: cumin, fennel, fenugreek + mustard seeds...

STEP THREE

Cooking a few  minutes to release  the aromatics...

STEP THREE

Before adding  fresh ginger and  ground spices.

STEP THREE

Stir to combine -  smells yum!

STEP FOUR

Add the drained rice  and mung beans...

STEP FIVE

Add everything else: stock, vegetables,  coconut cream, kombu...

STEP FIVE

Then cover,  bring to boil,  reduce to simmer.

STEP SIX

Stir it often! Look at that texture!

STEP SEVEN

Dish up, add toppings: fresh cilantro, lime and yoghurt

STEP SEVEN
